- 3.5 Oz of chorizo verde or 1 link
- 2 whole eggs
- 1/2 Oz Grape seed oil
- Your favorite store bought tortillas
- Nonstick frying pan
- Salt to taste
- Avocado for garnish
Method:
In a nonstick frying pan add your oil and heat up your pan to a medium heat. Add your chorizo verde and allow for it to cook, between 4-5 minutes.
Once your chorizo has cooked, place on a cutting board and rough chop it with a knife. In the same pan, crack your eggs on it and season with salt to your tastes. Once your eggs are almost done, return the chorizo verde to the pan and mix together.
While that is off the fire, heat up your tortillas and build yourself a taco, garnish with slices of avocado and some fresh radishes, we love adding chimichurri to our chorizo verde tacos, enjoy!
